Extra virgin olive oil, organic, cold-extracted, and early harvest.

Very fruity on the nose, with a sweet and enveloping flavor on the palate.

Practically free of bitterness and with a more pronounced spiciness.

Description

Oro del Desierto Monovarietal Olive Oil

Oro del Desierto Monovarietal, organic extra virgin olive oil, exclusively from olives harvested on the Oro del Desierto estates, at early ripeness. The olive groves are between 3 and 15 years old, and the irrigation is done by drip system.

We apply an agricultural system by which we obtain high-quality food while preserving the land’s fertility. In this way, we respect the environment, optimally using natural resources without the use of chemicals.

The olive groves of Oro del Desierto are cultivated following this pattern, allowing us to extract the highest quality organic extra virgin olive oil from their fruits. Being in an actual desert is a great advantage, provided there is water. Water is a scarce resource, and we use it rigorously. Our patented drip irrigation system allows us to “positively stress” our olive trees. On the other hand, heat and dryness are excellent natural enemies of pests.

Organic Monovarietals

Just like our Organic Coupage, considered one of the best in the world, it wouldn’t be possible to create it without the proper raw material. The origin of our Oro del Desierto Monovarietal, each different, but all surprising, each with its unique nuances.

When you taste them separately, you then understand why the Coupage has its distinctive flavor. The “sweetness” of the Arbequina, the “punch” of the Hojiblanca, the seriousness of the Lechín, and the “power” of the Picual, each one better than the last.

The ideal scenario is to have all of them in the kitchen and use them according to the dishes you want to cook. Let’s also remember that different varieties have different polyphenol contents. For instance, Picual contains the highest amount of these microelements, which provide flavor and aroma, but also health benefits and stability to the oil.
