Aceite de oliva San Carlos Gourmet

San Carlos Gourmet is a delight for the senses, an indisputable proof of good taste. In this regard, it has been crafted with the best selection of Cornicabra olives, lightly blended with Arbequina.

We enjoy a unique microclimate in Majadas del Tiétar, Cáceres. Thus, we produce the oil with the first harvest, selective drip irrigation, and fertilization that guarantees environmental conservation. In this way, we do not alter the oil, extracting it cold solely through mechanical processes of washing, decantation, and centrifugation.

San Carlos Gourmet has a golden-green color, persistent on the palate, with balanced freshness, sweetness, and bitterness, with a relaxed spicy sensation. This makes it ideal for roasts, cheeses, or barbecues.

With a minimum acidity below 1% (1 gram per 100 grams of free fatty acids) and without additives, complying with the maximum European limits for pesticide residues, stored in a clean, dry warehouse at a constant temperature and protected from the sun.

Gourmet Oil

Consumed raw, it best preserves its organoleptic properties. In fact, extra virgin olive oil is the vegetable oil with the best temperature resistance. This is due to its special fatty acid composition, oleic acid, and low sterol content, which reduces oxidative polymerization. Thus, it becomes an excellent natural preservative/maturer for other foods.

In this initial state, when the polyphenol level is at its highest. Therefore, these “herbaceous” oils are bitter, spicy, and intense green in color. As the season progresses, the olives mature, and these initial attributes soften or “flatten”, increasing sweetness and their color transitioning to yellowish tones.
