Altanza olive oil
Altanza, organic oil from La Rioja, Protected Designation of Origin, 100% Arbequina. First Prize Best “Fruity Ripe” Oil of La Rioja 2021.
The highest quality, healthiest oils with high nutritional properties are extra virgin oils (extracted or cold pressed). Therefore, it is recommended to take them raw to preserve their high properties.
Altanza is an extra virgin olive oil in branch, ground, beaten and separated in cold. After the decantation period in stainless steel tanks, the oil is packed unfiltered to preserve its exceptional organoleptic qualities.
Fresh, fruity and delicate aromas, with notes of green olives, freshly cut grass and garden tomatoes. On the palate, it is dense but delicate at the same time, given its low acidity (0.2%). Pleasant and persistent, with a subtle pleasant itch at the end.
It enhances the flavors of the food it accompanies, whether cold such as salads, creams or cheeses, or enriching dishes made of legumes, vegetables or fish.
Conservation tips for your Altanza EVOO
We must always remember that olive oil is a living, fresh product, such as bread or cheese. Therefore, from the moment the olive leaves the tree, oxidation and / or fermentation processes begin. It is normal, and it is in fact what makes good EVOOs grind just a few hours after the fruit is picked.
That said, the main enemies of your Highness are light, heat, and oxygen. We must therefore keep the bottles in a cool and dark place, and well closed. Let’s think that every time we open the bottle to serve ourselves, we renew the oxygen inside.
Therefore, once opened, it does not take us more than a couple of weeks to consume it. And for this reason also, we must avoid large formats, unless we are a large family or a community. Let’s not buy oils on the shelves for the same reason, since they have been mercilessly exposed for hours and days in the light of the premises … 🙁
