Sagaz Black olive oil
Premium Extra Virgin olive oil extracted exclusively from Picual olives, early harvest, cold extraction and filtering. Sagaz Black Oil Our EVOO has a certificate of DO Sierra Mágina, collected at the beginning of October to the end of November.
Intense green with golden flashes, filtered, great intensity, aromas of fresh grass with notes of olive leaves and rosemary. Astringent with character and personality, with a creamy body and bitterness that softens over time. It also has a slight spiciness and fresh notes, and its aftertaste is reminiscent of freshly cut grass, light pepper and olive leaves. It is indeed a masterpiece for any gourmet.
Pairing
Recommendations for use It pairs perfectly with salads, toasts, soups and gazpachos. Any sauce made with it will enhance flavors and smoothness. Ideal for preserving cooked or raw food. It is an olive oil with a high content of oleic acid (omega9), polyphenols and antioxidants.
Conservation of Sagaz Black
Let us remember that olive oil, when it is really EVOO, is perishable. Indeed, the microcomponents that give it these aromas, also shorten its life. It is a fresh product that is therefore sensitive to light, heat and oxygen.
That is why we must keep it in cool, dark places, and keep the bottle tightly closed, so as not to renew the oxygen.

The orographic peculiarities of the land make this 60,000 hectare olive grove less competitive than others in Jaén in terms of production.
