Sagaz White olive oil
Premium Extra Virgin olive oil extracted exclusively from Picual olives, early harvest, cold extraction and filtering. Sagaz White Oil Our EVOO is certified by DO Sierra Mágina, collected at the end of November to the end of January.
Intense yellow, medium intensity, aroma of green fruit, fresh herbs and olive leaves, persistent and harmonious, the green notes are perceived very clearly. Slightly astringent, with great character and personality, medium to high bitterness depending on the vintage.
Slightly spicy notes, with an aftertaste reminiscent of the mountains, herbs and green leaves.
Pairing
Recommended for general use in the kitchen, in salads, toasts, soups, sauces, gazpachos. The picual variety contains a high content of oleic acid (omega9), polyphenols and antioxidants.
Therefore, its high stability at temperature and oxidation, make it an ideal oil for cooking or frying.
Conservation of Sagaz White olive oil
Let us remember that olive oil, when it is really EVOO, is perishable. Indeed, the microcomponents that give it these aromas, also shorten its life. It is a fresh product that is therefore sensitive to light, heat and oxygen.
That is why we must keep it in cool, dark places, and keep the bottle tightly closed, so as not to renew the oxygen.
