Our farm is located in Alcaudete (Jaén Oil), a province where around 25% of the world’s olive oil production is produced. Perfect weather, bright sun, rain water and cold during winter. Privileged situation, an ideal environment for organic farming. The olive grove is located at an average height of 600 meters, with large temperature fluctuations between winter and summer, which allows the natural disinfection of our olive trees, safe from pests and diseases without using chemical products. The oil mill is located in the center of the olive grove, which allows us to grind in less than three hours, which prevents oxidation and preserves its natural antioxidants and flavor. Soler Rosemary Oil EVOO from the first day of the campaign On the first day of the campaign, a special edition is produced each year to capture the most authentic flavors of the olive. Very green Extra Virgin Oil, from little ripe olives, intense fruity. Flavor that starts out soft and increases, with a bitter and spicy aftertaste in harmony with the intensity of green fruity. The reason is that in the first days of the campaign the yield is lower, less amount of oil per olive but more concentrated, so the aromas are enhanced to the maximum in these first days. It is also presented in an exclusive bottle, with a transparent strip to appreciate its intense green color. You have to know that their number is limited, so they usually run out in mid-February. The oil mill In the past we were part of a cooperative, grinding together with 1400 other members. In 2001 we decided to leave the cooperative and build an oil mill, in the center of the olive grove, to process only the olives grown on our farm. In this way, we can control quality throughout the process, cultivation, harvesting, processing, packaging and marketing, using environmentally friendly techniques. Passion for olive oil from generation to generation practicing organic cultivation in the entire olive grove, with a considerable production capacity. In 2002 the CAAE certified us (the body that controls and certifies the cultivation and production systems in accordance with the European regulations on organic farming (EU Directive 834/2007)). In 2003 we obtained the USDA Organic certification, and the Japanese JAS. Finally, in 2011 the Chinese certification, becoming the first Spanish organic olive oil with this certification.
