Isbilya has a high intensity of fruity, slightly bitter, spicy and evoking almond and even banana. It seduces by the five senses, it comes to our eyes with an intense green color, shining like real emeralds.

Our nose perceives the soft aroma of a fresh, young and spirited oil, surprising us on the palate with its softness and delicacy. When tasting it, it reminds us of the gentle wind that gently rocks the delicate flowers of our olive grove.

In an extremely careful production process. We follow a deep olive tradition to preserve all its properties to the maximum. We harvest our olives in mid-October, in a single day and overnight. This is received by “Our Master Almazareros” in an optimal state, thus obtaining the purest olive elixir.

ISBILYA, a unique extra virgin olive oil. Coming from a millenary land of olive trees in the Aljarafe area (Seville), and following the chateau philosophy, since everything that is produced comes from a single farm “El Nogal”.

Oil to taste

It is a monovarietal of Sikitita, a valuable variety, rich in polyphenols, and unique in the world. The price of this oil is naturally high. It should not be compared to ordinary “virgin oils”, but it is an oil to taste, at the same level as we would with a Gran Reserva wine.

How to conserve our Isbilya

Obviously, like such wines, it must be preserved with care. The temperature must be stable and cool, in a dark place, and covered, since both temperature, light and oxygen can alter its properties and vary its aromas and flavor.

The oil mill

At the oil mill we respect nature to obtain a superior quality extra virgin olive oil. Our cultivation process has inherited the knowledge of three generations. Modern technologies are also the consequence of studies at prestigious universities and research centers.

The olive trees are located to guarantee that they receive maximum sun and light on their leaves, which provides a greater amount of fatty acids and a homogeneous ripening of the olive. Water and nutrients are precisely controlled to increase the quality of the oil. We pick the olives with care, to avoid them being damaged. In a very short time, it is transferred to the mill, thus maintaining the flavor and aroma of the extracted oil to the maximum.

Sikitita variety

Isbilya is olive oil of the Sikitita variety, which comes from the best known varieties in Spain, Picual and Arbequina. The first provides itching and bitterness, the second sweetness and softness. The Sikitita is the result of a perfect balance between the two.

Consume raw

It is an oil that should only be consumed raw. And not only because of its price (it would be very expensive to cook with this type of oil) but because only raw can all its nuances and aromas be appreciated. A real treat for the senses!
