Harvesting the olives just before they are fully ripened makes the fruity flavor of the extracted oil much more pronounced, highlighting the organoleptic and varietal characteristics of the olive. The collection is practically manual, only the fruits that are on the tree, not those that have fallen to the ground, due to the wind or early ripening. In this way, all the olives arrive healthy at the mill. The collection time is also less than 20 hours, and overnight (less than 10ºC) and grinding them the following day.
Conservation is also a key point to achieve a quality EVOO. At 11ºC the oil is in a liquid state, but very dense, so its characteristics remain practically unchanged, fruity flavor and initial greenish color. In fact, freshly made our EVOO has a similar appearance to kiwi juice.
