On our journeys through Cordoba lands we stopped to rest in a restaurant in the city. There they served us for the first time this surprising olive juice. When we tried it, we decided to start our current company that sells superior quality extra virgin oils.
Los Omeya Extra Virgin
At first, its dark green color, with golden hues, is striking. These nuances are even more striking at the beginning of the season, when we pack it as FRESH. This term means two things, that the oil is unfiltered and that it has NOT been stored, it has been directly bottleled.
Traditionally, this type of oil was only consumed by the farmers themselves, aware of the special fragrance of FRESCO. But little by little it was commercialized and is currently highly appreciated among our customers.
However, it has a little disadvantage. it is more perishable than a filtered extra virgin olive oil. This is because its micro-particles, responsible for those special aromas, eventually affect the oil. Therefore, it is important to consume it shortly after its extraction.
Oil that is not sold as FRESH is stored in warehouses for sale during the rest of the year. From there, one part is filtered, a mechanical process common in olive oil, and the other part remains unfiltered.
The filtrate will be preserved without problems until the next season, and the unfiltered must be “cleaned” regularly. Indeed, the suspended particles settle to the bottom of the tank and could damage it in the long run.
In any of its variants we are faced with some excellent extra virgin oils. However, it is important that we keep it in a cool and dark place. Remember that the main enemies of oil are heat, light and oxygen. For this reason, we also recommend transferring to small containers to avoid damaging the entire contents of a 2l or 5l jug.
