Almazaras de la Subbética Olive Oil. Family business that employs 4000 families who live by and for the olive grove, with more than 350,000 square meters (about 3,500 football fields).
It is an olive grove that enjoys a peculiar microclimate, high rainfall and important thermal oscillations, and an uneven and mountainous terrain, in the Natural Park of the Sierras Subbéticas, south of the Province of Córdoba.

Mountain olive groves
The Sierra de la Subbetica has been producing olive oil for thousands of years, located in rugged mountains. The work in these olive groves is arduous, since the slopes of the olive groves can be up to 70%.
In this mountainous terrain, many olive trees grow without irrigation in a “wild” way. Even so, it is in this difficult environment that some of the best Olive Oils in the world are produced.
The predominant varieties are Picudo and Hojiblanca. These old trees are so well adapted to the terrain that they are, by nature, resistant to pests, frost and drought.
Among the different brands it is worth mentioning its two “Crown Jewels“, which each year monopolize practically all the national and international awards. It is about the Rincón de la Subbética and Parqueoliva Serie Oro oils.
Parqueoliva is an Extra Virgin Coupage of the typical varieties of the Subbética, Picuda and Hojiblanca. It has a very intense fruity and excellent bitter-spicy balance.
The Picual olive, along with the Cornicabra, are those that contain a higher natural concentration of polyphenols. In fact, this is the reason why your oils sting and sour.
