Casas de Hualdo olive oil
Completion of the work of many people throughout the year. In them we capture the richness of the Hualdo estate and the commitment and affection to produce truly unique products.
They all have many aspects in common, which make them truly a family. They are made only with our own olives, from our olive groves. Thus, we select them at the optimal moment of maturation to get the best from each plot and variety.
They are first extraction oils, always made after a very short time from the harvest and in conditions of low temperature.
We filter them using cellulose plates, very respectful of the product, removing impurities and moisture, for better conservation.
The inerted stainless steel tanks are essential to keep the oils as stable as possible in our heated cellar.
We carry out the packaging practically on request, because we know that where our EVOO is best is in the cellar.
At the beginning of our olive oil adventure, we began to offer single varietals. With them we want to convey the typicity of each type of olive and our climate and soil conditions.
Later came the coupages or assemblies, in which we used different olive varieties.
These oils show the meticulous work of our elaiotechnician, seeking complexity and balance as a hallmark. In addition, with them we want to generate culture and passion for this unique product.
It was our clients who asked us for an EVOO with a certificate ecological and also large formats for use in the kitchen.
