Castillo de Tabernas, oils that come from our own farm located next to the Tabernas Desert, in Almería. With more than 110,000 olive trees and nearly 500 hectares, we are one of the largest producers at an international level.

There are unique natural products that seek excellence and can only be consumed at a certain time. This is the case of the unfiltered extra virgin olive oil from Castillo de Tabernas, authentic 100% olive juice.
It is liquid gold made with the first olives of the new harvest and that the company from Almeria only keeps on the market for a limited time to keep its spectacular characteristics and benefits intact.
The properties of the first fruits of the harvest (most of the olives are green) and the meticulous cold extraction process give rise to an oil with a unique flavor and aroma, very fruity and well differentiated, which enhances the benefits of antioxidants and polyphenols.
We must always remember that olive oil is a living, fresh product, such as bread or cheese. Therefore, from the moment the olive leaves the tree, oxidation and/or fermentation processes begin. It is normal, and it is in fact what makes good EVOOs grind just a few hours after harvesting the fruit.
That said, the main enemies of your Castillo de Tabernas are light, heat and oxygen. We must therefore keep the bottles in a cool and dark place, and tightly closed. Let’s think that every time we open the bottle to serve ourselves, we renew the oxygen inside.
Therefore, once opened, it does not take more than a couple of weeks to consume it. And for this reason too, we must avoid large formats, unless we are a large family or a community. Let’s not buy oils on the shelves for the same reason, since they have been mercilessly exposed to the light of the premises for hours and days…:-(
