The Extra Virgin (Virgen Extra) oils from DO Montes de Toledo are made exclusively with the Cornicabra variety. They are golden yellow to intense green in color. They present an intense fruitiness with notes of freshly cut grass, apple, and green almond. On the palate, they are dense and very pleasant, with medium-high values of bitterness and pungency (spiciness), resulting in a balanced profile. They stand out for their high polyphenol content and stability.
