Quintesencia Extra Virgin Olive Oil

Quintesencia Extra Virgin Olive Oil, produced by the Santísimo Cristo de la Misericordia cooperative in Jódar (Jaén), is a premium olive oil obtained primarily from the early-harvest Picual variety. It has received international recognition with a gold medal at the Dubai 2025 Competition and other prestigious awards.

Its sensory profile is characterized by a medium fruitiness with herbaceous notes, tomato, fig leaf, and greenery. The palate is balanced: bitterness and spiciness are present but not dominant, with a smooth finish of green almonds and nuts. The overall balance is harmonious, with good persistence and no harsh edges.

The oil is completely natural: it is cold-extracted using mechanical processes, without additives or heat, to preserve the fruit’s antioxidant compounds and fruity aromas.

It is best used raw: in salads, toast, roasted vegetables, or as a finishing touch to cold or warm dishes. If heated, some of its freshness and qualities are lost.

In addition to its flavor, it has nutritional value: rich in oleic acid, polyphenols, and vitamin E, with antioxidant and anti-inflammatory potential associated with early-harvest EVOOs.
