The Elizondo olive mill produces a high-quality, limited-edition extra virgin olive oil. They rigorously control the entire process, from harvest to sale. For its production, they use the Picual and Royal varieties, harvested in late October or early November, when they are not yet fully ripe. The oil is obtained through mechanical processes at room temperature, which helps preserve its healthy components. The result is an EVOO with an intense aroma, high fruitiness, and a balance between bitterness and spiciness, characteristic of a fresh, quality product.
