Aceites Cazorla, one of the star products of Spanish gastronomy and key to the Mediterranean diet, is Extra Virgin Olive Oil. Located at the gateway to the Sierra de Cazorla, Segura y las Villas Natural Park, our olive oil is characterized by a wild aroma and a fresh, velvety flavor.
Aceites Cazorla is made up of more than 2,000 farmers from the towns of Cazorla, La Iruela, Burunchel, Quesada, Chilluevar, Santo Tomé, and Peal de Becerro. Our main objective is to obtain, year after year, an EVOO of unsurpassed quality.
Aceites Cazorla Sociedad Cooperativa Andaluza, founded in 1951, is the cooperative with the longest olive oil production tradition in the Sierra de Cazorla region. We are committed to continuing to improve the quality and excellence of our oils.
We are 100% committed to the marketing of Extra Virgin Olive Oil, and also supporting the profitability and subsistence of traditional olive groves, severely affected by the proliferation of super-intensive farms.
The Sierra de Cazorla is a privileged environment for olive cultivation, declared a Biosphere Reserve in 1983 by UNESCO. Its production area is protected by the Sierra de Cazorla Designation of Origin (DO), whose boundaries include the municipalities of Cazorla, Chilluévar, Hinojares, Huesa, La Iruela, Peal de Becerro, Pozo Alcón, Quesada, and Santo Tomé.

Cazorla Oil
The Royal variety is native and is only found in the Sierra de Cazorla, representing around 6% of the total area. Its olives have a very characteristic reddish color when ripe, and their oils are of the highest quality.
Royal olive oil is characterized by its harmonious flavor, reminiscent of the freshness of the sweet fruit, with a very mild spiciness and bitterness. It has an intense fruity aroma, reminiscent of freshly cut grass, apple, and banana. Ideal for dressings and eaten raw.
The Picual olive oil variety is the most widespread in the Sierra de Cazorla, representing 94% of the area. Its oil has an intense flavor, with a slight spiciness and bitterness. Its aroma is fruity with fresh, green notes reminiscent of tomato, alloza, wood, apple, and fig. It also has a high content of natural antioxidants and vitamins and is highly stable. Ideal for cooking, enriching stews, seasoning foods, salads, meats, and fish.
Cazorla Oil Cooperative
The process of making “Aceites Cazorla” begins in the field with the harvesting of the fruit. The hundreds of cooperative members head to the Cooperative’s reception yard. The olive milling or grinding process begins in mechanized and automated mills. With the milled fruit, we obtain a paste that must be homogenized.
This is done with a blender, whose purpose is to blend the paste to facilitate the separation of the olive oil from the other byproducts, vegetable water and pomace. Throughout the olive delivery process, our cooperative’s workers carry out exhaustive quality control. To obtain the highest quality oil, the maximum storage time in the hoppers cannot exceed 12 hours.
For the oil to be considered Cold Extraction, the blender temperature must be below 27°C, thus ensuring the highest quality olive oil, resulting in EVOO (Extra Virgin Olive Oil).
Aceites Cazorla Extra Virgin Olive Oil is stored in stainless steel tanks to maintain the quality assurance chain throughout the entire olive oil production process. Thus, the cellar houses whole oils, green oils, and unfiltered oils. It’s worth noting that our winery is located in an isolated room with a temperature-controlled temperature of approximately 20°C.
