Fats can be good
Nutrigenomics specialist Iwona Rudkowska demystified the role of fats in health during the Eat Healthy and Live Green Expo. She emphasized that fats are essential for health, providing energy and essential nutrients such as vitamins A, D, E, and K, as well as adding flavor to food and prolonging the feeling of fullness. However, she pointed out the importance of consuming the right fats, such as olive oil and omega-3.
Rudkowska cautioned that not all fats are created equal and that fats from processed foods should be avoided, although saturated fats from Dairy products and meat are not as harmful as those from processed foods. Regarding dietary cholesterol, she indicated that it can be consumed without concern if blood cholesterol levels are normal.
Regarding the choice between butter and margarine, Rudkowska mentioned that butter is not as harmful as people think, especially in moderation, and that margarine, which is composed of oleic acid, can be a healthy option. However, she warned about the negative effects of heating oils to high temperatures for frying, an aspect she wants to investigate further in her research.
