Sabor d’Oro extra virgin olive oil, produced by the Yera family in Jaén, is an oil with a robust and natural flavor, made with Picual olives from centuries-old olive trees. It is obtained through early harvesting—between October and December, depending on the variety—and cold extraction in less than three hours, which preserves its freshness and intense green color thanks to the high chlorophyll content.
There are two representative lines. The Green version, obtained in mid- to late October, offers a fresh and complex aroma with herbaceous notes such as arugula, artichoke, tomato plant, green banana, and green almond. The palate is intense, with a progressive spiciness and a characteristic but pleasant bitterness; its texture is dense and gives the oil body.
The Tradición line (also unfiltered) stands out for its strong personality: a fine and intense aroma, with a velvety spiciness and marked bitterness, and hints of tomato, fresh herbs, artichoke, and alloza.
These oils are the product of careful, certified production under Integrated Production standards and cold mechanical extraction, ensuring quality, purity, and flawless flavor.
In short, Sabor d’Oro is a sincere oil, with character and elegance, ideal for consuming raw: on toast, salads, vegetables, or as a finishing touch to dishes where its natural intensity can be appreciated.
