The harvesting of olives for Sabor d’Oro Selección de Almazara is carried out with the same cleanliness and care as our earlier oils. The fundamental difference lies in the timing of the harvest, which in this case takes place during the months of November and December. During these months, green olives mix with those that have a hint of purple, indicating a more advanced maturity.
Tasting Notes
Initially, a fresh and fine nose, full of fruitiness of green almond and green olive, intermingling with aromas of tomato stem and vegetables within a great harmony and extraordinary complexity for pairing. Subsequently, a beautiful intensity and subtle bitterness reveal themselves, not aggressive but present.
It has a very fresh, balanced attack in the mouth, round with flavors that remind us of green almond, green grass, artichoke, tomato plant, and green apple.
