Marqués de Prado Olive Oil
Marqués de Prado, an EVOO produced from olives of the oldest olive grove on the estate. It is made from two varieties: Picual and Arbequino.
The Picual is produced from an olive grove aged between 10 and 40 years, imparting its characteristic gentle bitterness due to its high level of natural antioxidants and aromas of green leaf, tomato plant, and citrus. Additionally, the Picual variety brings bitterness from its high level of natural antioxidants.
The Arbequino, on the other hand, is produced from a five-year-old olive grove, offering a sweet entry followed by a characteristic spiciness in the mouth and throat. It exhibits a medium fruitiness with aromas reminiscent of green apple and banana.
The Coupage is a complex EVOO, made from three varieties that naturally blend in the field.
The Mill
A family-owned property, located on the banks of the Guadajoz River in the municipality of Baena (Córdoba). In 1924, the Marquises of Bedmar transformed the estate into an olive grove, previously used for pasture and cereals. Currently, the owner is Manuel Heredia Halcón, Marqués de Prado.
In 1996, the family began the conversion to Organic Farming (C.A.A.E.) and started irrigation transformation work for the olive grove. Thus, the traditional olive varieties of the Baena area, including Picudo, Hojiblanco, and Picual, are cultivated to promote pollination and control alternate bearing.
In 2006, the new mill was built to complete the production cycle, from tree to bottle. This modern bioclimatic building minimizes energy consumption and ensures the conservation and stability of the oil in the cellar.
Vegetation screens, photovoltaic energy panels, and an air chamber system maintain the interior at a stable temperature of around 23ºC, without any energy consumption. Additionally, the extracted olive pit is used as fuel for climate control and hot water for the mill.
In summary, using the energy from solar panels and olive pit, an energy balance is achieved in the process, with no additional fuel costs.
