Green Emerald
Green Emerald is made from the Picual olive variety from Jaén. The characteristic green color of Picual in our oil is the result of meticulous care to ensure the optimal properties of the oil.
Our EVOO is characterized by its fruity flavor with notes of green grass, tomato, green almond, artichoke, and fig tree. On the palate, it feels sweet, moderately bitter, and slightly spicier, but very balanced.

Blue Sapphire
This edition of Blue Sapphire comes in a 500ml bottle, blue and shaped like an emerald-cut sapphire. It contains only organic extra virgin olive oil from the Picual variety.
Organic Picual oil is similar to conventional Picual but greener in color, with a very intense fruity flavor. It also has a higher sensation of density, medium spiciness, and bitterness.
This variety is highly valued for its early production, ease of cultivation, and oil quality. It is also notable for its high proportion of oleic acid.
Premium EVOO
Blue Sapphire belongs to our Premium range, with a very intense sensory profile of green olive fruitiness, very complex. It features notes of fig tree, grass, stems, green almond, citrus, and tomato.
On the palate, it has a sweet entry, is moderately bitter, and somewhat spicier, all very balanced. It presents a more intense fruitiness compared to conventional Picual, due to the exclusive use of organic products on the olive trees.
Its production does not alter the biological cycles of the land or the tree, which favors their regeneration. Thus, conserving natural cycles directly benefits soil fertility.
