Oro de Cánava Extra Virgin Olive Oil, Selection “Early Harvest“, awarded in recent years with prestigious awards. Intense fruity aroma of green olives, great complexity, mint, tomato, and banana skin with ripe hints of almond, fig tree and apple.
Also, it has a clean, fragrant flavor, with harmony, light bitterness and progressive spiciness, very structured and persistent.
The process of making our oil begins in our olive groves where the olives on the tree are separated from the olives on the ground.
Only doing so we will obtain an oil recognized as one of the best of the Picual variety.
The olive comes from the region of Sierra Mágina, in the Northeast of the province of Jaén and declared a Natural Park. Our olive groves are very healthy with great foliaceous development, at 1,000 meters of altitude, being privileged by the existing microclimate in this region.
The campaign begins when the fruit reaches its maturity, usually in November. At this time, we grind the olives and extract its oil always at a maximum temperature of 22 degrees.
Conservation
Extra Virgin olive oil, the opposite of wine, is a “live” and fresh product. Therefore, time naturally runs against it, and we must take care of it while it is in the bottle. Remember to keep it away from light, heat and oxygen, tightly closed and in a dark and cool cupboard.
