Ecoprolive Olive Oil
Ecoprolive, pitted olive oils with the healthiest properties of the olives, variety, and timing of fruit harvesting. Specifically, the pitting process avoids filtering, oxidation, and the addition of water in the oil extraction process.
Ecoprolive was born in 2012 to improve the way olives are treated, a process patented in 2018. Therefore, we are zero waste, use supercritical fluids in extraction, and utilize the pits for energy purposes.
This is how we produce 100% organic EVOO, cold extraction, combining tradition and technology while keeping the olive’s properties intact.
Coupage
Extra Virgin Olive Oil made from Cornicabra and Picual olives, varieties with the highest content of polyphenols (natural antioxidants). Specifically, it has a medium fruitiness with aromas of ripe fruits, apple, banana, and almond. In the mouth, it has a smooth entry with fruity notes, balanced bitter and spicy, harmonious, and persistent.
Cornicabra
100% Cornicabra, very stable thanks to its high content of monounsaturated fatty acids and polyphenols. It is, in fact, one of the varieties with the best properties, very aromatic EVOO. It specifically shows fruity notes and a slightly bitter taste, though balanced in the mouth.
Limited Edition
Made with Arróniz and Picual varieties, the earliest harvest in the ECOPROLIVE family. Therefore, it has an intense fruitiness of green olive, with great aromatic complexity and herbaceous and fruity notes.
In the mouth, it has a smooth entry with green notes of olive leaf. Intense but balanced bitter and spicy.
Unfiltered
From olives harvested at veraison, this is Ecoprolive’s iconic product. In the mouth, it has a prolonged balanced fruitiness and pleasant Picual spiciness. It also has notes of green banana and almond.
Ecoprolive’s Preservation Tips
We must always remember that olive oil is a living and fresh product, much like bread or cheese. Therefore, from the moment the olive leaves the tree, oxidation and/or fermentation processes begin. This is natural and is indeed why good EVOOs are milled just a few hours after the fruit is harvested.
That said, the main enemies of your Ecoprolive are light, heat, and oxygen. We must keep the bottles in a cool, dark place and well-sealed. Consider that each time we open the bottle to serve ourselves, we renew the oxygen inside.
Therefore, once opened, it should be consumed within a couple of weeks. This is also why we should avoid large formats unless we have a large family or are a community. For the same reason, avoid oils on the shelves, as they are exposed to the store’s light for hours and days without mercy… 🙁
