Full Moon Extra Virgin Olive Oil
Full Moon, in mythology, the oil made from these olives is believed to contain magical powers, a talisman of eternal love, health, and luck. 100% Arbequina variety is an unequivocal manifestation of good taste and palate!
This extra virgin olive oil is recognized for its characteristic golden touch, harvested at the perfect ripening moment when the olive turns violet. In Majadas del Tiétar, province of Cáceres, we enjoy a unique microclimate, producing the oil with the first harvest, 15 days earlier than usual and with very limited production.
Only in this way can we achieve the maximum level of fruitiness and an outstanding aroma.
Beginnings
At the beginning of the oil mill, a few years ago, Pago Baldíos San Carlos struggled to sell its oil. They had to rely on the salespeople from their other business (real estate) to introduce it to restaurants and chefs. And soon, word spread!
Currently, it is the oil served at the Puerta de América hotel, at the Ritz, and in NH Hotels. Besides prestigious chefs such as Ferrán Adriá or Pedro Subijana. It is also exported to numerous countries such as the USA, Japan, France, Singapore, and China.
It is also regularly presented at the main international competitions, which play a significant role in promoting it. Full Moon oil is, lastly, an excellent gift! Its elegant and carefully designed bottle will allow you to delight clients, friends, or family. A touch of good taste and distinction.
The Oil Mill
Our family has been connected to the land since the 17th century. Pago Baldíos San Carlos is the inheritance of several generations.
This experience is reflected in the entire production process of our olive oil. Our philosophy is research and quality, to obtain a natural and healthy product.
Our olive groves are located at the foothills of Almanzor mountain, with eternal snow, clean water, and the sun of Extremadura.
Thanks to this exceptional microclimate, we can complete the harvest 15 days earlier than usual, allowing us to achieve a unique aroma.
The key lies in the climate and soil, experts say. Indeed, in Majadas del Tiétar (Cáceres) there is a unique microclimate, very suitable for olive cultivation.
Additionally, the Full Moon olive never touches the ground and is only bottled on demand, always in dark glass, never in plastic containers. In this way, we ensure it spends the least time possible bottled before reaching the consumer.
