To prepare olive oil mayonnaise, it’s best to use a narrow container with a base that allows the blades of an immersion blender to rest firmly on the container.
Crack the egg into the container and add three fingers’ worth of extra virgin olive oil. The trick to preventing the mayonnaise from curdling is to make sure the egg and oil are at the same temperature. Therefore, it’s recommended to take the egg out of the refrigerator beforehand so that it’s at room temperature.
Add a pinch of salt and a squeeze of lemon juice (which can be replaced with a little vinegar).
Using the immersion blender, press it against the bottom of the container, turn it on full power and hold it still for 10 to 15 seconds.
