Arbequina, Softness, Fluidity, and Fragrance
The Arbequina is originally from Palestine, introduced by the Duke of Medinaceli in the 17th century from the castle-palace of Arbeca, hence its name. The olive tree is small and resistant to cold, producing high yields of fruits in clusters, green/violet in color and shiny, with early ripening and good oil yield.
This oil is highly valued for its softness, fluidity, and fragrance, with medium intensity dominated by fruity notes (apple, green almonds, green banana) over bitterness and spiciness. These oils are particularly known for their harmonious, delicate, and sweet almond-like characteristics.
It is somewhat more delicate than other varieties against oxidation, so it is important to protect it from light and heat.
Bardomus Borriolenca, Rural and Rustic
Native to Borriol (Castellón), highly productive, rural, with early ripening, elongated and asymmetrical fruits. This makes the oil extracted from Borriolenca olive abundant and of high quality. Unfortunately, it is a variety in decline, generally found on family farms and produced for self-consumption.
Its olives are highly appreciated in the province of Castellón, the finest and most exquisite in the area, with a very peculiar flavor.
Bardomus Canetera, Bitter, Intense, and Elegant
Originating from Canet lo Roig (Castellón), also known as Caneti, Nana, Seniera, and Llusió. The tree is small and of low vigor. The Canetera olive is a variety sensitive to drought and cold, with early production and low resistance to detachment, which facilitates mechanized harvesting.
It produces highly stable oils against rancidity, with medium oil yield. It has a medium-high intense green fruity flavor, persistent, with intense and elegant bitterness on the palate. Additionally, the spiciness is very sophisticated, pleasantly invading the lips and tongue.
Bardomus Assemblage, Signature EVOO
Made from Borriolenca, Canetera, and Arbequina varieties, the best olives to create our signature Coupage, Assemblage. It combines the sweetness and fluidity of Arbequina with the rustic touch of the native Borriolenca and Canetera. The result is a balanced EVOO, slightly bitter and spicy.
Bardomus, the Mill
The BARDOMUS estate has been owned by the Barchi Casali family since 1989. Located directly on the Mediterranean, between the Natural Parks of Prat de Cabanes and Sierra de Irta.
We enjoy an exceptional microclimate, which provides unique organoleptic qualities to our oil.
Thanks to these conditions, the olives ripen very early and are harvested as early as mid-October, capturing the maximum attributes for our oil.
