Casas de Hualdo olive oil
Extra Virgin oils in which, above the spiciness and bitterness, fruity notes predominate. It is effectively an EVOO full of aromas, of medium intensity. In addition, in the tasting notes, we perceive memories of artichoke, tomato leaves, freshly cut grass, almond and apple.
When tasting it, its unctuousness and structure can be appreciated, a truly interesting product. It is actually an extra virgin olive oil that is very fruity to the taste, sweet and suggestive. In particular, the fruity notes by smell are not masked by the bitter and spicy.
Casas de Hualdo Oil
El Carpio de Tajo (Toledo), our farm contains more than 300,000 olive trees, at a height of between 400 and 600 meters. Up here temperatures drop, although without freezing, guaranteeing optimal conditions for the olives.
Exhaustive monitoring of the cultivation, drip irrigation, collected directly from the tree and immediately transported to the oil mill so that the fermentation processes do not have time to start, and it is cold milled, below 25ºC.
Grinding at these low temperatures significantly reduces production, but much more aromatic and expressive oils are obtained, and only in this way are the great antioxidant qualities preserved in the oil. At the end of the road we obtain 700,000 liters of Premium Extra Virgin olive oil that we export to 27 countries.

Cornicabra
The Cornicabra is the most traditional in our area. With a high amount of antioxidants, they give it a multitude of leafy green and apple aromas. The only one with Denomination of Origin Montes de Toledo. Best EVOO from Castilla la Mancha in 2016.
Chamomile
Originally from Cáceres, it gives rise to an extra virgin oil balanced between bitter and spicy. Aroma of green tomato, chicory and basil. Gold medals in Olive Japan 2016 competitions.
Picual
Fruity and persistent, Intense and of great complexity, It is the most widespread variety in the olive world, recognized for its high content of polyphenols. Aromas of green leaves and green banana. 2nd prize in the Mario Solinas 2015 contest.
The key to good EVOO: Polyphenols
Buying olive oil in the supermarket, even if it says Extra Virgin on the label, does not make much sense. They are oils that could have been EVOO at some point in their life, but simply by being exposed to light and heat on the supermarket shelves they have already lost their precious polyphenols and vitamins.

Pairings
With roast lamb, white meat or grilled meat, but also with fatty fish. Applied to cooked octopus, with a chive-based vinaigrette, cut into slices, it is ideal.
You can add pieces of olives with anchovy, coarse salt and sherry vinegar. It combines perfectly with different legumes: lentils or green beans, fabada, beans, but also with pumpkin, mushrooms, mushrooms, asparagus or any potato stew.
