Why is it good to cold-extract olive oil?
Currently, true extra virgin olive oil, first cold-pressed, is that extracted under pressure at temperatures never exceeding 27ºC and with an acidity level below 0.5ºC. Extra virgin olive oil is precisely the only type that can be consumed directly, virgin, and raw.
A first cold-pressed oil is one extracted from the pulp of freshly cold-crushed olives, without having been pressed beforehand. In fact, the olive pulp is only pressed once, and the remaining paste is either repressed or discarded.
