Buying Oil in Córdoba
Córdoba’s EVOO is a true blend of flavors and aromas, where nature expresses itself in every drop. The diversity of olive varieties, the Mediterranean climate, nutrient-rich soils, and the dedication of the olive growers come together to create an oil with a unique and unmistakable personality. Among the most notable native varieties, we find:
- Hojiblanca: Balanced and harmonious oil, with notes of green almond, apple, and a subtle bitter finish, perfect with cheeses and fish.
- Picual: The most widespread variety in Córdoba, with an intense green fruity, pronounced bitterness and spiciness, ideal for high-temperature cooking due to its high stability.
Protected Designations of Origin (PDO): Seal of Quality and Tradition
Córdoba has four Protected Designations of Origin (PDO) that guarantee the quality and authenticity of its oils: Baena, Priego de Córdoba.
Each of them represents a unique terroir, with specific climatic and geographical characteristics that are reflected in the flavor and aroma of their oils. These PDOs are a seal of guarantee for the consumer, who can be assured of purchasing a product of the highest quality, made from olives grown and processed in a defined geographic area and subject to strict quality controls.
