Plantío del Duque EVOO

Why is it Beneficial to Cold-Extract Olive Oil?
Currently, true extra virgin olive oil from first cold extraction is extracted under pressure at temperatures never exceeding 27ºC and with acidity below 0.5ºC. It is precisely extra virgin olive oil that can be consumed directly, virgin, and raw.
A first cold-pressed oil is one extracted from the pulp of freshly milled olives without pressing beforehand. The olive pulp is only pressed once, and the leftover paste is either repressed or discarded.
