To offer the highest quality and freshness, we only bottle EVOO from the last campaign, stored in the cellar throughout the year. Therefore, to guarantee maximum freshness, we bottle on request.

Organoleptic evaluation
Once the oil is produced, it is tasted by expert tasters, since it is essential to know its nuances. In addition, to confirm these nuances and determine their exact composition, a more extensive analysis is carried out by an external official laboratory. In particular, determining the chemical and sensory parameters, classifying its category and its levels of fruity, bitter and spicy.
On the other hand, a single taster could be wrong and / or offer subjective judgment. Therefore, the official tasting is carried out by between 8 and 12 tasters, the Tasting Panel, to objectify the final evaluation.
On the nose, Palacio de los Olivos has a high intensity of green fruity, predominantly fresh herbaceous aromas and aromatic herbs. We also distinguish touches of green fruit trees, banana skin, kiwi and green apple. These attributes are undoubtedly characteristic of an oil extracted from healthy olives, harvested when they are still green (Early Harvest).
In the mouth, the green aromas are combined with taste sensations of fresh green pepper, green tomato and bitter almond. In addition, the positive attributes of bitter and spicy, are moderate and balanced, of pleasant intensity, and light astringent final notes. This is due to its high content of natural antioxidants.
Finally, by applying the same agricultural techniques, we manage to maintain the high quality and the homogeneous organoleptic profile every year.

It is a family business dedicated to the production and packaging of only high quality extra virgin olive oil.
Our olive trees are located in Campo de Calatrava, also in Almagro. In fact, it is an area of land rich in nutrients and an exceptional climate for olive cultivation.
Our olive grove covers 210 hectares, of soil of volcanic origin, it is ideal for the Picual olives. The reason is that this variety is indeed very vigorous and adapts perfectly to the demands of the terrain. In this way it provides particular, characteristic and unique nuances of Palacio de los Olivos EVOO.
