EVOO Sabor d’Oro Tradición
Selection of the first day of harvest, obtaining a limited edition oil that is designed for lovers of traditional oil. That is why it can also be arranged in RAMA or without filtering, just as it was taken yesteryear.
In this way the flavor of all the pulp of the olive is present in the oil. It is the result of the tradition of generations of olive growers that are summarized in this designer bottle with an intense flavor and a dark green color.
Inside it houses the best oil of the campaign, the family reserve, obtained with the selection of olives on the first day of harvest in October. This makes it a very special oil both for its high chlorophyll content, hence its vivid, intense green color, and for its exceptional organoleptic properties.
Tasting Notes
SABOR D’ORO TRADICIÓN It is the oil in the line with the most personality, it has an itching and bitterness that is very present in the mouth and the fine and intense aroma, typical of the Picual variety.
In the mouth it presents a characteristic personality of the early oils of Jaén, with a velvety spiciness that appears progressively in the retronasal cavity. The green nuances that appeared on the palate appear again on the nose, although this time with a slight hint of artichoke and alloza.
Care Tips
We must always remember that olive oil is a living, fresh product, such as bread or cheese. For this reason, from the moment the olive leaves the tree, oxidation and/or fermentation processes begin.
It is normal, and it is in fact what makes good EVOOs grind just a few hours after the fruit is harvested. That said, the main enemies of your Sabor d’Oro Tradición are light, heat and oxygen.
We must therefore keep the bottles in a cool and dark place, and tightly closed. Let’s think that every time we open the bottle to serve ourselves, we renew the oxygen inside. Therefore, once opened, we should not take more than a couple of weeks to consume it.
And for this reason, we should also avoid large formats, unless we are a large family or a group. For the same reason, let’s not buy oils on the shelves, since they have been mercilessly exposed to the light of the premises for hours and days…:-(
