Vieiru Olive Oil
The Manzanilla Cacereña olive is the fundamental raw material of our extra virgin olive oil. In fact, our monovarietal liquid gold comes exclusively from this native olive variety. It is a type of olive mainly cultivated in the regions of Sierra de Gata and Hurdes.
This variety gives our extra virgin olives excellent quality, outstanding fruitiness, and greater resistance to oxidation. For this purpose, it is harvested at its optimal ripeness directly from the tree by “milking” (by hand), always by mechanical means, so that the olive is not damaged.
Then, we grind it just a few hours after its harvest, with cold kneading.
Protected Designation of Origin Gata-Hurdes
The relief of this area is typical of mountain ranges, corresponding to the southern slope of the Central System. It covers part of the Gredos, Béjar, Peña de Francia, and Gata mountains. Thus,the extra virgin olive oils produced under the “Gata-Hurdes” Designation of Origin are yellow-green in color and have great stability and purity.
An area of 30,000 ha is used, where 9 million Manzanilla Cacereña olive trees are planted.
