Unfiltered olive oil is distinguished by its cloudy appearance and intense flavor, due to the presence of olive particles. Although these particles enrich it with polyphenols, they also make it more prone to oxidation, shortening its shelf life. An unfiltered oil with a deep green color is a sign of freshness. It is ideal for cold dishes or low-temperature cooking, but is not recommended for frying. Due to its fragility, it should be stored away from oxygen, light, and heat to preserve its quality.
