During the harvest, from November to February, we call it FRESH (unfiltered) because it is not stored, but bottled directly after being milled. Filtered, without the suspended olive remnants, so that it lasts longer, recommended for stews and frying.

Cooperativa La Unión offers EVOOs considered among the best in Córdoba, sourced from selected fly-harvested olives and collected at the beginning of the season, around October, to obtain maximum freshness and fragrance, even though the quantity of oil extracted is smaller. It is thus an intense green oil with golden reflections, featuring an aroma of freshly cut grass and ripe fruit. On the palate, it offers freshness, an almond flavor, and slight bitterness.
During the first months of the harvest, it is packaged FRESH (cloudy, unfiltered) and without passing through our storage tanks in the cellar, directly to the bottle or jug, to achieve maximum freshness.
