Aceite Isbilya
Isbilya boasts a high intensity of fruitiness, slightly bitter, spicy, and evoking almond and even banana. It seduces all five senses, with an intense green color dazzling like genuine emeralds.
Our sense of smell perceives the soft aroma of a fresh, young, and vigorous oil, surprising us on the palate with its smoothness and delicacy. Tasting it brings to mind the gentle wind that tenderly sways the delicate flowers of our olive grove.
Nocturnal Harvest
In an extremely careful production process, we follow a deep olive-growing tradition to preserve all its properties to the maximum. We harvest our olives in mid-October, in a single day and during the night.
They are received by “Our Master Millers” in optimal condition, thus obtaining the purest olive elixir. Isbilya, a unique extra virgin olive oil.
Originating from a land of ancient olive trees in the Aljarafe area (Seville), it is produced on a single estate, “El Nogal”.
Both in its Sikitita and Koroneiki varieties, they are rich in polyphenols and unique in the world. Naturally, the price of this oil is high. It should not be compared with common “virgin oils”; rather, it is an oil for tasting, just as we would with a Gran Reserva wine.
How to Preserve Our Isbilya
Naturally, like such wines, it should be kept with care. The temperature should be stable and cool, in a dark place, and covered, as temperature, light, and oxygen can alter its properties and change its aromas and flavors.
Consume Raw
This is an oil that should only be consumed raw. Not just because of its price (it would be very expensive to cook with this type of oil) but because only in its raw state can all its nuances and aromas be appreciated. A true delight for the senses!
