San Carlos Gourmet Olive Oil
San Carlos Gourmet, from Majadas del Tiétar (Cáceres), is an EVOO made with the best selection of Cornicabra olives and a touch of Arbequina. It benefits from a unique microclimate and is cold-extracted from the first harvest using exclusively mechanical procedures.
It has a golden-green color, with balanced freshness, sweetness, and bitterness, and a relaxed spiciness. With a minimal acidity (less than 1%), it is ideal for roasts and cheeses.
Its high level of polyphenols in the initial state gives it herbaceous notes. Its resistance to temperature and its optimal use raw are highlighted, being an excellent natural preservative. It is preserved under strict residue limits.
