Aceite de oliva Oro San Carlos
Oro San Carlos, the best selection of Arbequina and Cornicabra olives. In Majadas del Tiétar, province of Cáceres, a unique microclimate is enjoyed. The oil is produced with the first harvest, 15 days earlier than usual, and with very limited production.
Only in this way can the maximum level of fruitiness and an outstanding aroma be achieved. Oro San Carlos has a very pleasant, fruity, and complex flavor at the same time, with notes of freshly cut grass and green almond.
Manufacturing Process
Only through mechanical procedures, obtained directly from olives, without altering the oil, but only through washing, decantation, and centrifugation processes. Extracted cold, with minimal acidity, below 1% (less than 1 gram per 100 grams of free fatty acids).
Free from additives, it complies with the maximum European limits for pesticide residues. Stored in a clean, dry warehouse, at a constant temperature and protected from the sun.
Storage Tips for Oro San Carlos
We must always remember that olive oil is a living and fresh product, similar to bread or cheese. Therefore, from the moment the olive leaves the tree, oxidation and/or fermentation processes begin. This is normal and is what makes good EVOOs be milled just hours after the fruit is harvested.
That said, the main enemies of your Oro San Carlos are light, heat, and oxygen. We must keep the bottles in a cool and dark place, and well-sealed. Remember that every time we open the bottle to serve ourselves, we renew the oxygen inside.
Therefore, once opened, it should be consumed within a couple of weeks. For the same reason, we should avoid large formats unless we are a large family or a community. We should not buy oils from store shelves either, as they have been exposed mercilessly to the store’s light for hours and days…:-(
