AOVERDE is a GREEN extra virgin olive oil, from the Picual variety, carefully selected from the youngest olives on our estate, which give it a lasting flavor, aroma, spiciness, and freshness. Green oil is the juice extracted from olives at the veraison stage, hence the color (due to its high chlorophyll content). Additionally, this youthfulness gives our oil all its freshness.
Originating from Jaén, it is the most well-known and widespread in Spain, with very defined characteristics compared to other varieties. Its nuances include an intense spiciness that leaves a pleasant floral aftertaste. Profound fruitiness that recalls tomato plant, artichoke, freshly cut grass, and green olive. Its spiciness becomes more pronounced when young but always in a balanced manner.
It is considered a robust and full-bodied oil, where even a small portion on your plate allows you to savor its distinguished flavor.
