EVOO, Extra Virgin Olive Oil
EVOO has only really existed for a few years. The reason is that olive oil mills have always believed that to extract the maximum oil from the olives, heat was necessary. However, recent studies have shown that this was a huge mistake. By applying heat during extraction, those microcomponents that truly differentiate EVOO from simple olive oil are lost, particularly Vitamins and Polyphenols.
Additionally, oleic acid also “suffers” and as a result, the acidity level of the EVOO rises, eventually exceeding 0.8 degrees, at which point it loses the right to be called EVOO.

Therefore, the purchase of extra virgin olive oil is less simple than it seems. We will not only look for brands and varieties that have been recommended to us, but we will also take care to read the labels to ensure its origin, variety or year of harvest and production.

Moreover, never buy EVOO that is not from the current harvest (around November) as olive oil, unlike wine, loses its qualities naturally as it ages.
