Pago Baldío San Carlos Olive Oil
100% pure Arbequina variety is an unequivocal manifestation of good taste and palate! The Pago Baldío San Carlos extra virgin olive oil is recognized for its characteristic golden touch. It is harvested at the perfect ripening moment, when the olive turns violet.
In Majadas del Tiétar, province of Cáceres, a unique microclimate is enjoyed, creating the oil with the first harvest, 15 days earlier than usual.
Very limited production, only in this way is it possible to achieve the maximum level of fruitiness and an outstanding aroma. Obtained directly from olives, only through mechanical processes. The oil is not altered, only processes of washing, decantation, and centrifugation.
Cold extraction, unfiltered. Minimum acidity below 1% (free fatty acids do not exceed 1 gram per 100 grams).
No additives, complies with maximum Europeanlimits for pesticide residues, stored in a clean, dry warehouse, constant temperature, and protected from the sun.

Our family has been connected to the land since the 17th century, so Pago Baldío San Carlos is the inheritance of several generations.

Our olive groves are located at the foothills of Almanzor mountain, with eternal snow, clean water, and the sun of Extremadura.
Thanks to this exceptional microclimate, we can complete the harvest 15 days earlier than usual, allowing us to achieve a unique aroma.
