Olive Oil from Jaén
The oil from Jaén is predominantly of the Picual variety, accounting for 95% of the province’s production. This variety is characterized by its strong flavor and personality, with pronounced spicy and bitter notes. It is also very resistant to high temperatures, making it suitable for frying.
This variety has varied fruity aromas (mainly apple and tomato), and due to its strong flavor, it pairs well with gazpachos and salmorejos, robust salads with ingredients like arugula or feta cheese, red meats, stews, and grilled fish.
The oil from Jaén is famous on a global level, with 3 Protected Designations of Origin: Sierra Mágina, Sierra de Segura, and Sierra de Cazorla. These are mostly high-mountain olive groves, with poor soils and extreme climatic conditions, which paradoxically produce high-quality olives, as it forces the olive tree to “protect itself”.
Oil from Jaén has been produced since the times of the Phoenicians, Greeks, Romans, and Arabs, and today the region is the world’s largest producer of olive oil, contributing 20-25% of the world’s production (and 40% of national production). This is why Jaén is also known as the “Sea of Olives“.
Mills of Jaén
Currently, Jaén has 402 mills, and the province has significantly boosted Oleotourism in recent years with the “Jaén Oil Routes”:
visits to mills, museums, oil tastings, and gastronomic samplings.
In fact, the Spanish Association of Olive Municipalities (AEMO) awarded the Best Mill in Spain 2022 to Castillo de Canena, located in Baeza.
