Jaén’s oil is predominantly of the Picual variety, which accounts for 95% of its production. This variety is known for its strong personality, with a spicy and bitter flavor, and is ideal for frying due to its resistance to high temperatures. With aromas of apple and tomato, it pairs well with gazpachos, salads, and red meats. Jaén, known as the “Sea of Olives,” produces 40% of Spain’s oil, with its quality endorsed by three Protected Designations of Origin.
